Mexican Fiesta!

Apparently, Hawaii isn't exactly known for their spicy food... then again, it's hard for me to find places like Eddie's Taco House, Las Palapas, and Chacho's anywhere but in San Antonio (there's also La Bodega in Odessa!!)

Anyway, today is Nick's (Jess's hubbie) birthday - Happy 28th!! - and so Jess has decided to host a Mexican fiesta for him, despite him not being here. Good news - he returns July 1st-ish! The menu sounds great: enchiladas, tacos, beans, rice, and of course salsa! We will be cooking all afternoon and we're making a ton of food. My guess is we'll end up with leftovers that'll last us for weeks! I don't doubt it will be spicy enough for me, I just hope it's not too spicy for some of her friends. :)

mmmm... Mexican food... The selection in Rhode Island is slim to none and about the same in Hawaii. The "best" (it's all relative) we could find was Rosie's Cantina in Haleiwa. Someday we'll be back in San Diego and have some real Mexican food. :) Have fun!
